Chimmelier, Korean Fried Chicken Sommelier in Koreatown LA

The name Chimmelier, a mix of “chicken” and “sommelier,” reflects our dream to master the art of making the perfect fried chicken.

Back in 2021, during some tough times, we, Dustin, Jeff, and Kevin, started Chimmelier with a humble beginning in a parking lot. Our idea was simple but filled with hope: to add our own twist to LA’s Korean fried chicken scene, which we felt could use a bit of shaking up. We weren’t about being the biggest or following the usual paths laid out by big chains or small family spots; we just wanted to share our love for a good Korean-style fried chicken sandwich.

The name Chimmelier, a mix of “chicken” and “sommelier,” reflects our dream to master the art of making the perfect fried chicken. But really, we were just three friends with a shared passion, trying to make our mark, one chicken sandwich at a time.

Starting from nothing but a pop-up in parking lots to reaching events like Coachella and even Smorgasburg, LA’s largest open-air food market, was something we never took for granted. Each step was a lesson, each event a story, and each customer a friend we hadn’t met yet.

Our journey wasn’t about making it big overnight. We faced our share of challenges, like losing our jobs during the pandemic, but it also gave us the push to finally pursue our own path. Chimmelier is our little rebellion against the odds, a testament to doing what you love with people who believe in the same dream. We’re just grateful for the chance to do what we love, sharing our take on Korean fried chicken with anyone willing to try it.
